Collection: Atum Claro - Bonito
Welcome to autumn! At least in Germany. In other parts of the world, summer is still going on, and lasts until mid-October. For example, in the Azores, which belong to Portugal and are located far out in the Atlantic.
Every summer, a centuries-old tradition comes to life here: tuna fishing. From July to October, the crystal-clear waters around islands such as São Jorge are teeming with many different species of tuna, especially the highly prized white tuna (Albacore, Thunnus alalunga) and skipjack (Skipjack, Katsuwonus pelamis).
In picturesque villages such as Santa Catarina on the Azores island of São Jorge, fishermen traditionally catch tuna using hook and line. This sustainable method respects the marine ecosystem and guarantees the high quality of the catch. This practice is far more than a mere fishing technique - it is an art form that respects and preserves the delicate balance of the marine ecosystem and is a testament to the region's rich maritime heritage.
White tuna, affectionately known as "Atum" in the Azores, is a true treasure of local gastronomy. Its tender meat is often processed and preserved on site to preserve its freshness and unique flavor.
We at Maître Philippe & Filles love the products from Santa Catarina and it seems you do too. Each can is not only an explosion of flavour that stays in the memory for a long time, but also a tribute to the tradition and sustainability of Azorean tuna fishing.
The tuna season in the Azores is an impressive example of how tradition and modernity can go hand in hand, showing that we can enjoy the treasures of the sea without harming the environment.
