An ideal companion for every picnic. As with all Pirate Cannery products, this tuna is carefully produced and canned in the Landes, on the southern French Atlantic coast.

Known for its exquisite quality and considered the finest of tuna varieties, albacore tuna is at the heart of this culinary work of art.

Teriyaki sauce is a Japanese seasoning sauce that traditionally consists of soy sauce, sake (or mirin, a sweet rice wine), and sugar or honey. Sometimes ginger, garlic or spring onions are also added to expand the flavor nuances. Teriyaki sauce gives all dishes a sweet and salty taste. However, it is particularly popular for preparing marinated and grilled meat or fish, with "teriyaki" referring to the Japanese cooking method in which foods are grilled or fried and then glazed with the sauce. The sauce caramelizes as it cooks, giving the dish a nice shine and rich flavor. Teriyaki sauce is used in various cuisines around the world and is available in many supermarkets both as a ready-made sauce and in the form of dry mixes.

Pirate Cannerie is an artisan fish cannery in the Landes.
Lucie, 34 years old, started this business alone in April 2022.
She gets her fish from the fish auction in Ciboure in the Basque Country and processes everything in a former duck farm that she took over a few kilometers away in the Landes.
It also sources mackerel and sardines directly from small fishermen in Saint Jean de Luz, but also processes tuna, Pyrenean trout from Saint Étienne de Baigori and tacaud, a species of fish less known to the general public, in order to promote local and sustainable fishing.
Since she works alone, it is a small production, so not all recipes are available all year round, but change depending on the season of the fish.
Soon, squid, an invasive species due to warming waters, will also be canned.
Only trout is available all year round.
Pirate Cannerie's goal is to rejuvenate canning with modern and tasty recipes while celebrating local fisheries.

Shipping of heavy orders

Where do you ship to?

Delivery is currently only in Germany and Austria.

With which shipping service provider do you ship?

We currently only work with UPS or DHL. You will be asked to select a delivery method during the ordering process.

How long does it take until I receive my order?

That depends on where you are. Orders to Germany take 3 to 5 working days to arrive. Delivery details will be provided in your confirmation email.

Pirate Cannery

Did you know that a third of all fish caught is never eaten because industrial fishing crowds out smaller businesses and pollutes the environment? In addition, more than 10 million tons of food are wasted in the fishing industry every year.

Preservation is a traditional, health-conscious method that preserves food for up to 5 to 10 years.

In St Laurent de Gosse, Landes, France, the artisan canning factory Pirate, founded by Lucie Lesgourgues, is taking a stand against this waste. Pirate aims to revolutionize fish consumption through innovative and sustainable recipes, always in harmony with the seasonal characteristics of the sea. The ingredients come from local, traditional catches and are processed by hand on an adapted farm. In its second year of existence, Pirate is already expanding in France and Europe.

Lucie also plans to expand her involvement with workshops on sustainable fishing practices. Pirate therefore not only stands for a brand, but for a movement towards a more conscious and sustainable use of seafood.
