Verjus, a traditional product made from unripe grapes, has long been used in cooking and mixology, especially in regions with limited access to citrus fruits.

Avaa stands out from other verjus products in terms of taste. Its aroma is complex, subtly fruity with notes of herbs, pears, bergamot and black tea.

This acidic juice is extracted before the grapes develop sugar. Its mild acidity, which lies between vinegar and lemon, has made it a popular local acidifier.

In modern times, verjus has largely been forgotten due to readily available alternatives.

The inconsistent quality and limited availability led Jakob Karberg and Benjamin Müller to take on the issue. After a year of intensive research and development, they created Avaa.

Avaa Verjus is produced in limited editions from organically grown grapes from Rheinhessen. The exact composition of the three grape varieties used remains a well-kept secret.

Manufacturer

The roots of Avaa Verjus lie in the Berlin gastronomy scene. Benjamin, Edward and Jakob, the founders, have long been rooted in the world of exquisite food and regional cuisine.

Benjamin and Jakob from the Organic Food Studio had been moving in similar circles to Holger for a long time. They knew each other casually through mutual contacts such as Kristiane Kegelmann from Pars Pralinen, Vadim Otto Henselder from the Otto Restaurant and Billy Wagner from Nobelhart & Schmutzig.

The decisive moment came in 2020 during a break in the lockdown. They met again at the Art Biesenthal art event in the north of Berlin. This meeting led to the decision to join forces and work together on a project - the beginning of Avaa Verjus.

Delivery is currently only available in Germany, Austria and Denmark

Shipping costs (including VAT)

Deliveries to Germany with UPS, DPD, Hermes or DHL.

We calculate the shipping costs based on the order value (gross value of goods):

  • Goods value up to €80.00 = €8.95 with DHL, €6.95 with DPD, Hermes or UPS
  • For orders over €80.00 (after deduction of all discounts) we offer free shipping.

Shipping of heavy orders

For orders with a total weight of more than 10 kg, we reserve the right to ship exclusively via the shipping service providers DPD or UPS. This measure serves to ensure a reliable and efficient shipping process for heavier shipments.

We ask for your understanding for this regulation, which enables us to ensure smooth shipping even for larger order quantities.

Deliveries to Austria and Denmark

We calculate the shipping costs based on the order value (gross value of goods):

  • Goods value up to 149.99 € = 15.00 € (UPS)
  • For orders over 150.00 € (after deduction of all discounts) we offer free shipping.
Delivery times

Unless a different deadline is specified in the respective offer, the goods will be delivered domestically (Germany) within 5 to 7 working days.
If you have ordered items with different delivery times, we will send the goods in one shipment unless we have made different arrangements with you. In this case, the delivery time is determined by the item you ordered with the longest delivery time.

Where do you ship to?

Delivery is currently only in Germany and Austria.

With which shipping service provider do you ship?

We currently only work with UPS or DHL. You will be asked to select a delivery method during the ordering process.

How long does it take until I receive my order?

That depends on where you are. Orders to Germany take 3 to 5 working days to arrive. Delivery details will be provided in your confirmation email.

How can I track my order?

After your shipment has left our warehouse and has been scanned by the carrier, you will receive an automatic e-mail overnight with tracking information.
