Verjus, ein traditionelles Produkt aus unreifen Weintrauben, findet seit jeher Verwendung in der Küche und Mixologie, besonders in Regionen mit begrenztem Zugang zu Zitrusfrüchten.

Avaa hebt sich geschmacklich deutlich von anderen Verjus-Produkten ab. Sein Aroma ist komplex, subtil fruchtig mit Noten von Kräutern, Birnen, Bergamotte und schwarzem Tee.

Dieser säurehaltige Saft wird gewonnen, bevor die Trauben Zucker entwickeln. Seine milde Säure, die zwischen Essig und Zitrone liegt, machte ihn zu einem beliebten, lokalen Säuerungsmittel.

In der modernen Zeit geriet Verjus aufgrund leicht verfügbarer Alternativen weitgehend in Vergessenheit.

Die inkonsistente Qualität und begrenzte Verfügbarkeit führten dazu, dass Jakob Karberg und Benjamin Müller sich der Sache annahmen. Nach einjähriger intensiver Forschung und Entwicklung schufen sie Avaa.

Avaa Verjus wird in limitierter Auflage aus ökologisch angebauten Trauben aus Rheinhessen hergestellt. Die genaue Zusammensetzung der drei verwendeten Rebsorten bleibt ein wohlgehütetes Geheimnis.

Die Wurzeln von Avaa Verjus liegen in der Berliner Gastronomieszene. Benjamin, Edward und Jakob, die Gründer, sind seit langem in der Welt der exquisiten Lebensmittel und regionalen Küche verwurzelt.

Benjamin und Jakob vom Organic Food Studio bewegten sich schon länger in ähnlichen Kreisen wie Holger. Sie kannten sich flüchtig über gemeinsame Kontakte wie Kristiane Kegelmann von Pars Pralinen, Vadim Otto Henselder vom Otto Restaurant und Billy Wagner von Nobelhart & Schmutzig.

Der entscheidende Moment kam 2020 während einer Pause im Lockdown. Bei der Kunstveranstaltung Art Biesenthal im Norden Berlins trafen sie erneut aufeinander. Dieses Zusammentreffen führte zu dem Entschluss, ihre Kräfte zu bündeln und gemeinsam an einem Projekt zu arbeiten - der Beginn von Avaa Verjus.

Delivery is currently only in Germany and Austria.
