A Burgundy-style Savagnin from the Jura with floral notes and a hint of pineapple.

This extraordinarily elegant wine is a so-called "vin ouillé", which is not oxidized, but is classically matured. The grapes come from a single plot - "Aux Molates".

The result is characterized by floral notes with a hint of fresh pineapple and goes well with spicy and exotic dishes, eg with curry or with wasabi!

"Unleashes the flavors, catapulting them to the heart of the palate for unforgettable explosions of flavor." - Valérie Closset

The 5 hectare "Champ Divin" (heavenly field) vineyard is located on the first plateau of the Jura in the Sud-Revermont region.
It has been run by Valérie and Fabrice Closset-Gaziaux since 2008, who took it over from the Delay family in 2008. The property features a variety of soils and is influenced by a classic continental climate with moderately cold winters and mild summers.
Here they grow Pinot Noir (2 hectares), Chardonnay (2 hectares) and Savagnin (1 hectare), also known as "Traminer".

The property is processed according to biodynamic methods (Demeter-certified), without the use of chemicals. The vineyard is worked by hand, partially removing and partially leaving the grass so as not to upset the delicate balance of the vineyard ecosystem.
Herbal decoctions (e.g. nettle and chamomile), essential oils, biodynamic tinctures, as well as copper and sulfur are used in very small quantities to combat pests.
The grapes are hand-picked when they are at their best, when they have reached their full potential.
Vinification and aging are carried out with minimal use of sulfur and some of the wines are aged under a veil of flor (yeast), typical of the region, giving them aromas of dried fruit, nuts and almonds, as well as spices such as saffron and curry.

Useful information:
Jura wines are considered to be very flavorful and with a strong character, which go well with farm-made cheese. Today, Jura wines are also fruity, balanced, structured and reminiscent of the wines from nearby Burgundy, and they are very good value for money.

There are traditionally two types of wine in the Jura: the "vins ouillés" and the "vins typés" .
With the "vins ouillés" , the amount of wine that evaporates in the barrel is replenished so that the wine does not oxidize through contact with oxygen. These wines are usually characterized by light fruity notes and a slight spiciness, as well as a pronounced minerality.
With the "vins typés" the evaporated liquid is not replenished and a desired veil of yeast forms on the surface. Characterized by nutty, yeasty and salty notes, these wines are not for beginners. In general, they are rarely drunk on their own, but rather as an accompaniment to poultry, exotic dishes or spicy cheese.
