This balsamic vinegar is made from cooked grape must, which has been matured according to the ancient tradition through slow acetification*, which gives it its balanced sweet and sour taste.

The sweet and sour taste of this balsamic will brighten up your tomato and mozzarella salads. But it's even more original if you use it to refine your ice cream with Madagascar vanilla.

All Martin-Pouret vinegars are bottled in 25cl glass bottles, which are much more environmentally friendly than standard plastic bottles.

*The vinegar production process is accompanied by vinegar artisans who provide the bacteria with quality wine and optimal conditions. Although it is often referred to as acetic fermentation, it is actually not a fermentation but the oxidation of ethanol to acetic acid, known as acetification.

Manufacturer

Martin-Pouret from Orléans on the Loire is one of the top addresses when it comes to French vinegar. This vinegar is the basis of what is now a large and diverse range of the finest delicatessen and condiments with which the traditional brand delights us.
Since it was founded in 1797, work has been carried out using traditional methods and with great care. Be it through the selection of the finest grape varieties, masterful flavoring or storage in oak barrels - at Martin-Pouret the art of vinegar production is brought to perfection.
The house's tireless pursuit of perfection has produced vinegars that, then and now, can be found in renowned kitchens and on the tables of real gourmets around the world.

The most popular products include Orléans mustard, based on a recipe from the 16th century, gherkins (crisp gherkins) traditionally marinated in white wine vinegar, as well as delicate ketchups and gourmet mayonnaises, refined with our own mustard and vinegar.

Since the Renaissance, the production of vinegar in France has been inextricably linked to the picturesque city of Orléans and the majestic Loire River.
At that time, fine wines from the south of France were transported across the Loire to Orléans before continuing their journey overland to Paris.
On this adventurous journey across the stormiest river in Europe, some wines began to undergo a second fermentation.
In Orléans, these wines were entrusted to the skilled hands of the city's vinegar masters, who skillfully transformed them into vinegar. This is where the famous Vinaigre d'Orléans came from - the vinegar of Orléans.

There were once up to 400 vinegar producers in Orléans, supplying 80% of the national demand for vinegar.
The renowned Orléans method became the gold standard for vinegar production, similar to the “Méthode Champenoise” for sparkling wine. Today there is only one traditional company that has mastered this traditional technology: Martin-Pouret.

Manufacturer's address: Martin-Pouret, 11 Rue Jeanne d'Arc, 45000 Orléans, France
